Excluding contact lists from your recipients' list is one useful advanced tool to target your campaign.

When you choose contact lists to which you want to send your email campaign from the To step of your campaign creation, you can also choose some lists of contacts to which you don't want to send it. Even if those contacts are present in the recipient lists, they won't receive your email campaign.

To exclude a list of contacts, click Advanced options and under Don't send to, select the list(s) you want to exclude: 

In this example, the campaign will be sent to both Loyal customers and Newsletter subscribers, but the Bad payers list will not receive your campaign.
